Susan has been teaching culinary and baking pastry for the past seven years. She was a fulltime instructor at Le Cordon Bleu/CHIC and adjunct at the RMC and the Illinois Institute of Art. She has written and developed new courses and syllabi including, Baking and Pastry, Caribbean, Catering, History of Food and Culture, Sugar and Chocolate and more. Chef Taves was contracted by Chicago Public Schools with write and standardize the three year high school curriculum in 2001.  She continues to teach for Oakton Community College, Glencoe Park District and Dinner at Eight, as well as private classes.
